
Thought I would get a headstart on chocolate recipes seeing as how the stores have gone Valentine's crazy already. I was inspired to do this based on a wonderfully candid post on Brownies by my friend at Living with Logan. I have made GFCF Brownies many times with many results..all of which were NOT good. I have since made brownie like variations of cakes & muffins but no true "brownie", until now. This is an adaptation of a few different recipes from a really great book "Cookies For Everyone" that I reviewed a while back and of course I had to tweak it to suit my tastes and perfect it (ok so I am mildly competitive tee hee). So blah blah blah anyways here it is for all to enjoy..nice lightly crisp exterior with a moist fudgy interior..chocolate heaven..and GFCF of course ;)
GFCF Double Chocolate Brownies
1/4 cup applesauce
1 Tb canola oil
1/2 cup cane sugar
dash salt
1/2 cup Enjoy Life Dairy free chocolate chips
1/2 tsp vanilla
2 1/2 Tb dark chocolate cocoa powder
2 Tb water
Combine all of these ingredients in a pot and heat over low heat until chips are melted and remove from heat.
3/4 cup Bob's Red Mill All Purpose Mix
or my flour combo:
1/4 cup Bob's Red Mill Almond Flour
1/4 cup Bob's Red Mill Brown Rice Flour
1/4 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
Combine all of these ingredients in a bowl with a whisk to combine.
Stir together wet ingredients with the dry ones and pour into a greased 9x9 square baking dish.
Bake in a 350 degree oven for about 22 minutes, do not over bake ;)
Pour yourself a glass of your favorite milk or non dairy milk and melt into chocolate bliss. ;-D
