GFCF Honey Oatmeal Banana Bread with Bob's Red Mill Rolled Oats


I hope everyone is enjoying Cooking with Oats 2011 brought to you by Bob's Red Mill Gluten Free Oats, with all that Gluten Free variety who won't enjoy going Gluten Free!?


So I thought where to go next with oats than my favorite Gluten Free Banana Bread, yes? Funny thing is I've never actually blogged a straight up Gluten Free Banana Bread even though I make it..i just plum have forgot (that's what children do to ya folks..haha good times). So here it is with all its moist goodness, complete with the wonderful added texture and delicious taste of Bob's Red Mill Rolled Oats and what's even better for the next day?...GFCF Banana Bread French Toast...mmmmmm..I might have to blog about that one day ;)




GFCF Honey Oatmeal Banana Bread






2 Tb. Cornstarch or Arrowroot

2 Tb. Flax meal


1 tsp Baking Soda

Dash of Salt


Combine these ingredients in a medium bowl with a whisk and set aside.


Preheat oven to 325 degrees.



1 cup Mashed banana (about 3 bananas)

1/3 cup Oil

1/3 cup Honey

2/3 cup Brown Cane Sugar

2 tsp Vanilla


Combine these ingredients together in a Large Bowl with a Hand mixer until smooth and creamy.


Fold Flour mixture into wet ingredients gently with a spatula or spoon until just combined.


Pour into 9x5 bread pan and bake for approximately 50 to 60 minutes checking for doneness throughout and don't over bake!

  1. I know I'm behind/late, but I think I'm making this soon.....it looks delicious and I happened to be stacked full of Bob's Red Mill (fill in the blank). Thanks for all these great recipes!
